Super Easy Beef and Enoki Mushroom Sukiyaki


🛒 Ingredients

  • Sliced beef (shabu-shabu beef)

  • Enoki mushrooms

  • Cabbage

  • Onion

  • 2 eggs

  • Soy sauce

  • Sugar

  • Chopped green onions

📌📌 If you're hurrying to cook this dish and the meat is frozen solid, it can be quite frustrating, right?


In this case, try using the defrost function on your microwave.

Surprisingly, many people haven't used this defrost feature before, so pay attention!

This function is truly amazing. It evenly defrosts the meat, giving you results that feel like you just bought fresh meat from the store. When using the regular microwave setting, one side often cooks while the other remains frozen, which can be disappointing. However, once I discovered the defrost function, I realized how convenient and beneficial it is.

Not only does it defrost, but it also retains moisture, creating a freshness that feels like you just bought it.

When you use the defrost function, you'll need to input the weight of the meat. I feel safer by setting it slightly below the actual weight, especially with sliced beef. If it melts too much, it can become slippery and harder to work with during the rolling process. So, I recommend defrosting just a little.

👩🏻‍🍳 Recipe


  1. Slice the cabbage and onion into slightly thick strips.

  2. For the sauce, mix 1/2 cup of soy sauce, 1 cup of water, 1 tablespoon of sesame oil, and 1 tablespoon of sugar.

  3. Take the sliced beef and place enoki mushrooms inside, then roll it up.

  4. Heat some oil in a pan and sauté the onions for a bit.

  5. On top of the sautéed onions, layer the cabbage and the rolled beef.

  6. Pour the prepared sauce over everything, cover the pan, and let it cook for 3-4 minutes.

  7. Beat the 2 eggs well and pour them evenly over the beef, then let it simmer for a short while.

  8. Finally, sprinkle chopped green onions on top as a garnish to complete the dish.


 

Do you have any leftover ingredients? Try freezing them! Mushrooms can be frozen too. I also placed the cabbage and onion at the bottom of the freezer container. This way, it will be more convenient to use when you cook next time! It's a great method to keep ingredients fresh while making use of any leftover food. 😊
