Soegogi Muguk, or Korean Beef Radish Soup, is a traditional dish that is both hearty and comforting. This flavorful soup features tender beef, typically brisket, and Korean radish (known as mu), creating a rich and savory broth.

Often enjoyed with a bowl of steamed rice and an array of side dishes called banchan, Soegogi Muguk holds a special place in Korean cuisine. It’s commonly associated with home-cooked meals and family gatherings, and its comforting warmth makes it a popular choice during colder months, evoking nostalgia and a deep connection to Korean culinary traditions.


This healthy, homemade frozen meal can be ready in minutes—just add water and simmer! With tender beef, radish, mushrooms, and green onions, this mild and comforting soup is perfect for the whole family. It can also be easily adapted into other dishes like rice cake soup (tteokguk) or dumpling soup (mandu guk) as the base.

🛒 Ingredients


• 1 lb beef (chuck roast, brisket, or skirt steak)

• Korean radish (or daikon )

• Mushrooms (any kind will work)

• Green onions

• 2 tbsp soup soy sauce

• 1 tsp salt

• Pepper

• 1 tbsp fish sauce

• Minced garlic

• 1 broth cube

👩🏻‍🍳 Recipe


1. Soak the beef in water for about 30 minutes to remove excess blood, then cut it into bite-sized pieces.

2. Heat oil in a pot and stir-fry the beef to prevent it from sticking together.

(use chuck roast, brisket, or skirt steak)

3. Season the beef with 2 tbsp soup soy sauce, 1 tsp salt, and a couple of dashes of pepper. Stir-fry again briefly.

(The beef doesn’t need to be fully cooked at this stage.)

4. Let the beef cool.

5. In a freezer-safe container, layer the stir-fried beef, sliced radish, mushrooms, and green onions. Pour any remaining broth from the beef into the container.

6. Add 1 broth cube, a couple of dashes of pepper, 1 tbsp fish sauce, and minced garlic to complete the prep.

Versatile Base:

Use this soup as a base for dumpling soup (mandu guk) or rice cake soup (tteokguk).


Space-Saving Storage:

If freezer space is limited, store the meal in a zip-top bag, flattened to save space.


Labeling Tip:

Always label the storage bag or container with the preparation date for easy tracking.


No Soup Soy Sauce?

You can substitute with regular soy sauce, but keep in mind that using only soy sauce for seasoning might make the soup too dark. Use a combination of soy sauce, fish sauce, and salt for the best flavor balance.


Difference Between Soup Soy Sauce and Regular Soy Sauce:

Soup Soy Sauce: Higher salt content with no sweetness, perfect for soups, stews, and vegetable dishes.

Regular Soy Sauce (Jin or Yangjo): Lower salt content with a hint of sweetness, ideal for stir-fries and braised dishes.
