Seaweed Soup Meal Prep (Miyeok Guk) 🍲



Seaweed soup, or miyeok-guk, holds a significant place in Korean cuisine, made primarily from a type of seaweed called miyeok. This traditional dish is often enjoyed on birthdays and during postpartum recovery, as it is believed to aid mothers in healing after childbirth. Rich in essential nutrients, miyeok is packed with iron and calcium, making it beneficial for preventing anemia and promoting bone health.


Not only is miyeok-guk highly nutritious, but its savory flavor and smooth texture also place it among the top three favorite soups in Korea. To make enjoying this beloved dish even easier, I’ve embraced frozen meal prep. This approach not only benefits my own family but also allows me to care for those around me.


For individuals who may struggle with meal preparation, such as elderly parents or those recovering from illness, having pre-prepared meals on hand can be a lifesaver. It simplifies sharing meals, especially during times like hospital visits.


I recall a message from one of my subscribers who mentioned that if they had known about meal prepping earlier, it would have made their postpartum recovery much smoother.

🛒 Ingredients


• Dried seaweed (15 g per 2 servings)

• Beef for soup (chuck roast, brisket, or stew meat)

• Potatoes

• Minced garlic

• Fish sauce

• Broth cube

• Soup soy sauce

👩🏻‍🍳 Recipe


1. Soak the seaweed in water until soft, then cut it into manageable pieces.

(Seaweed sold in the U.S. can be quite tough, so I usually soak it overnight.)


2. Soak the soup beef in water for about 30 minutes to remove blood, then cut it into bite-sized pieces.


3. Heat sesame oil in a pot and stir-fry the seaweed, beef, and soup soy sauce. Add 1 tbsp of soup soy sauce for every 2 servings.


4. Let the stir-fried seaweed and beef cool down.


5. In a freezer-safe container, add the seaweed, beef, diced potatoes, minced garlic, 1 tbsp of fish sauce, and 1 broth cube.


6. When ready to eat, pour in enough water to cover about half of the ingredients and bring to a boil. Add more water if needed.


7. Adjust the seasoning with salt to taste before serving.



 


📌 Cooking Tips

• In the U.S., chuck roast is the most affordable cut of beef for this recipe.

(Other good options include brisket, skirt steak, or stew meat.)


• Using only salt for seasoning may result in a less flavorful broth. It’s better to combine fish sauce + salt or soup soy sauce + salt for a richer flavor.


• There are two main methods to achieve a deeper broth flavor:

1️⃣ Stir-frying the ingredients first and then adding water to simmer.

2️⃣ Mixing the ingredients with seasoning before adding water and simmering.

For this recipe, I used method 1.


• Adding potatoes to seaweed soup helps create a creamier, thicker broth due to the starch.

For the best texture after freezing and thawing, blanch the diced potatoes in hot water for 2-3 minutes before freezing. However, I skipped this step, and I’m fine with the resulting texture. 😊


• Broth cubes can vary in intensity depending on the brand. If the flavor feels weak, try adding an extra cube.
