Portobello mushrooms, with their large size and meaty texture, feel like biting into tender cuts of meat! đŸ„đŸŸ«đŸ„


By swapping out traditional flour pizza dough for mushrooms, this dish leaves your stomach feeling light and satisfied, even after a hearty meal.


Have you ever tried stuffed mushrooms as an appetizer at restaurants? They’re delicious!

But I’ve always felt disappointed by their small size—usually, you get just 8 tiny mushrooms, which feels far from satisfying. Plus, they’re not the best value for money, so I rarely order them. 😂


This recipe is my way of making up for that!

Inspired by a dish I had years ago at an Italian restaurant, I’ve recreated and adapted it into a mushroom pizza recipe that addresses one of the biggest challenges—mushrooms tend to release water, making it tricky to meal prep. But with this method, no worries at all!


 


🛒 Ingredients

‱ Giant portabella mushrooms

‱ 1 cup breadcrumbs

‱ œ cup grated parmesan cheese

‱ ⅓ cup chopped parsley

‱ 4 tbsp melted butter

‱ 1 tbsp garlic powder

‱ Salt and pepper to taste

1. Prepare the mushrooms:

Remove the stems from the mushrooms and use a spoon to scrape out the dark gills inside.

2. Clean the mushrooms:

Dampen a paper towel and gently wipe the mushroom caps clean. Avoid rinsing with water to preserve their flavor and texture.

3. Make the filling:

Mix breadcrumbs, parmesan cheese, parsley, melted butter, garlic powder, salt, and pepper in a bowl until well combined.

4. Stuff the mushrooms:

Fill each mushroom cap with the breadcrumb mixture, pressing gently to pack it in.

5. Freeze for later:

Wrap each stuffed mushroom individually in parchment paper, place them in a zip-top bag, and freeze.

6. Cook:

When ready to eat, cook the stuffed mushrooms in an air fryer at 350°F for 12 minutes.



📌 Cooking Tips

‱ No washing needed: Mushrooms don’t need to be rinsed with water since they’re grown in a clean environment. Plus, water can make them lose flavor and nutrients.

‱ Use the stems: Chop up the removed mushroom stems and layer them under the breadcrumb mixture before stuffing. Nothing goes to waste!

‱ Add protein: Feel free to customize it with bacon, chicken, or other proteins to make it heartier.
