Carbonara Meal Prep Recipe
Do all your family members have the same taste preferences?š² It can be a bit tricky when everyone wants different types of food for each meal.
From what I've seen while raising kids, it's pretty rare for families to all enjoy the same meals. With food culture becoming more diverse, family meal requests have also expanded.
This is where meal prepping comes in handy. Itās perfect for creating personalized dishes for each family member, especially on weekends!
I considered prepping the sauce separately and adding it to the pasta later, however, simply topping pasta noodles with sauce doesn't allow the flavors to fully penetrate the pasta, resulting in a more surface-level taste. That's why I created the recipe this way.
š Ingredients (Serves 6)
⢠10 slices of bacon
⢠Spaghetti noodles
⢠1 onion
⢠Plenty of parsley
⢠2 egg yolks
⢠Parmesan cheese
⢠Heavy cream 3/4 cup
⢠White wine
⢠Olive oil
š If you donāt have fresh parsley, dried parsley works just fine.
š Do you have to use heavy cream?
Not at all! There are plenty of dairy substitutes:
⢠Half and half
⢠Whipping cream
⢠Milk (though less creamy, so add some butter for a richer flavor)

š©š»āš³ Recipe
First, bring the water to a boil and then add 1 tablespoon of salt.
Add the spaghetti and cook it slightly underdone.
(It will finish cooking while mixing with the sauce.)
Slice the bacon into thin strips and finely chop the parsley and onion.
Heat olive oil in a pan and sautƩ the onion until it turns golden brown.
Add the bacon to the pan and cook until crispy.
Turn the heat to high, pour in white wine, and stir until the alcohol evaporates.
(Any budget-friendly wine will work just fine.)
Add 3/4 cup of heavy cream to the pan and bring it to a gentle boil.
Mix in Parmesan cheese, chopped parsley, a bit of pasta water, and 2 egg yolks until combined.
Add the cooked pasta to the sauce and toss until the noodles are well coated.
Adjust seasoning with salt or fish sauce, depending on your preference.
š Meal Prep & Freezing Tips
⢠Add a small amount of butter and olive oil to the storage container or zip-top bag with the pasta.
(This keeps the texture soft after reheating.)
⢠Seal tightly to remove as much air as possible before freezing.
⢠Reheat in the microwave and enjoy your delicious carbonara anytime!
