This quick and easy pasta dish is not only ready in 15 minutes but also offers incredibleĀ flavor while being healthy and light.

1. Heat a bit of oil in a pan and sautƩ the minced onion and garlic for about 3 minutes.
2. Add the sun-dried tomato along with its oilĀ and cook for another 3 minutes.
3. Season with fish sauce, salt, and pepper to taste.
4. Stir in plenty of grated Parmesan for extra richnessāthe more, the better!
5. Sprinkle in chopped parsley to finish the sauce.
6. Cook your pasta, drain, and toss it with the sauce for about 3 minutes to let the flavors absorb.

šĀ If it feels a bit dry, add a splash of pasta water or extra oil to loosen it up.

šAnchovy vs. Fish SauceāSurprised?
Indeed, I opted for fish sauce instead of anchovies here! When you consider it, both anchovies and fish sauce are fermented fish products. š Many Asian home cooks in the U.S. use fish sauce as a clever trick when preparing pasta. It's incredibly convenient and provides the same salty, umami depth as anchovies.
This recipe is incredibly simple, yet it feels special-ideal for a cozy weekend meal with family. Itās a bit different from your typical pasta, but very satisfying and surprisingly healthy. I find myself making it repeatedly.
I hope this recipe adds a little something special to your table, too. šš
