1 T Gochujang (Korean chili paste), 1.5 T Korean chili powder, 1 T Soy Sauce, 1 T Minced Garlic, 1 tsp Minced Ginger, 1 T Sugar, 1 T Plum Syrup (Optional), 1 T Sesame Oil, Pepper

Scrambled Eggs

16 Eggs (for 1 lb of pork), Salt, 1/2 cup Milk

Crucial: Cook until moist, then spread and cool immediately.

Pico de Gallo

Tomatoes, Onion, Cilantro, Jalapeño, Salt, Pepper, Lemon Juice


Other Ingredients

1 cup Kimchi, Cheese (Cheddar, Mexican Blend, or Monterey Jack recommended), 12 Tortillas

Finely chop and thoroughly squeeze the juice from the Kimchi.

  1. Combine the ground pork with the marinade ingredients until fully mixed.

  2. Sauté the meat. When it is halfway cooked, introduce the Kimchi and finish cooking them together. (Finely chop and thoroughly squeeze the juice from the Kimchi)

  3. Mix the eggs with salt and milk.

  4. Cook the eggs on medium-low heat and stir gently until they’re soft and creamy. 📍 Golden Rule: When scrambling, turn off the heat when the eggs are still slightly wet (moist) and spread them out to cool immediately. Do not pile them up, as residual heat will overcook the center and cause an undesirable odor.

  5. There’s no need to pre-cook the tortillas. Simply assemble them with the cooked pork, eggs, and cheese, then place them in a resealable freezer bag.

🥣 Pico de Gallo Recipe


Ingredients

  • Tomato 2-3

  • Red onion 1/2

  • Jalapeño 1-2

  • Cilantro

  • Salt

  • Pepper

Instruction

  1. Dice the tomatoes into small pieces.

  2. Finely chop the red onion.

  3. Remove the seeds from the jalapeño if you want it less spicy, then chop it finely.

  4. Chop the cilantro.

  5. Put everything into a bowl and mix gently.

  6. Season with salt and pepper to taste.

  7. Let it rest for 10 minutes so the flavors come together.


What Cheese Works Best? 🧀


While any cheese technically works, for tacos, I highly recommend using Cheddar, a Mexican Blend, or Monterey Jack. Many people reach for Mozzarella, but I find its flavor is too mild for the robust profile of a taco.

1. Hold the taco securely with your left hand.
