Mexican-Style Grilled Corn with a Twist 🌽


It's corn season, and I'm thrilled with how cheap it is- only 25 cents each! There's something incredibly satisfying about buying fresh corn at such a price. 😊


If you’re in Texas, you’ve probably seen Mexican street vendors selling grilled corn from their trucks. It’s a bit like how we have popular street snacks like tteokbokki or soondae in Korea- comforting, everyday treats that everyone enjoys.🛻


Whenever I catch the scent of that smoky grilled corn while passing by, I must stop. Mexican-style corn isn't just plain grilled corn- it's packed with seasoning, mayo, and cheese, making it incredibly flavorful!


Today, I'm sharing a version I learned here in Texas, with a slight twist: I add parmesan cheese to make it extra rich and savory. Just imagine that combination, impossible not to love. 😋

🛒 Ingredients


• Corn

• Butter

• Mayonnaise

• Paprika powder (or gochugaru)

• Parmesan cheese

• Fresh cilantro

👩🏻‍🍳 Recipe


1. Microwave the corn in its husk. The husk helps steam the corn and keeps it moist and tender.

👉 Microwave 1 corn cob for 4 minutes; add 1 minute for each extra cob.


2. While the corn is still warm, mix butter and mayonnaise together and spread them all over the corn.


3. Sprinkle paprika over the top.

👉 You can substitute with fine Korean chili powder if you like!


4. Grate parmesan cheese generously over the corn, then top with fresh chopped cilantro.


5. If you have a lemon, squeeze some fresh lemon juice over the corn- it adds a wonderful tangy kick! 😋





📌 Cooking Tips

• Trim the corn silk before microwaving to keep things neat.

• Arrange the corn in a single layer in the microwave so it cooks evenly.

• Other seasoning ideas: lemon pepper or Tajin powder pair perfectly too!
