Rice paper, a familiar ingredient in Vietnamese spring rolls, is being used in so many different ways these days! I also really like spring rolls, and I always thought of them as an ingredient that I would reach for more because I could eat a lot of them without feeling any weight gain and my stomach was comfortable.
I found out that the calories in this rice paper are much lower than those in other foods.
Can you believe that while a slice of bread has 120-150 calories, this rice paper has only 30 calories?
To eat a delicious sandwich, you need to eat two slices of bread, one on top and one on the bottom, so each slice of bread contains 300 kcal...
And the tortilla that many people enjoy these days actually contains 120-140 kcal per sheet.Ā So you can see how low the calories of this rice paper are, right? š
These days, I've been noticing a lot of fusion recipes using rice paper uploaded. So I've been trying out recipes frequently, following the content, and I've made a lot of interesting discoveries along the way. Is it just me?
When I watched other people's videos, the crispy texture looked really delicious, but for some reason, mine was often cooked with a soggy texture, and I wonder why it tears so easily... haha š„² This experience was really disconcerting.

Apply oil sparingly and very thinly for the best results. I found using an oil spray dispenser to be super convenient for this purpose. Remember, if there's too much oil, the dish can easily become soggy and carry an overwhelming oily taste.
When adding toppings like eggs or cheese, be sure to spread the edges as thinly as possible. I personally used a spatula for this, which made the process much easier.
It's also important to ensure that the ingredients are not wet, as moisture can cause the rice paper to tear. For instance, when using ingredients like kimchi, make sure to squeeze out any excess liquid.

Ingredients š [For 1 person]
1 sheet of rice paper
1 egg
3 ounces chopped kimchi (about a handful)
4 ounces mozzarella cheese
Chopped green onions
Chia seeds and hemp seeds (optional)

Spray the pan with a thin layer of oil.
Keep the fire at medium heat.
Place a piece of rice paper on top and crack an egg into the center.
Scatter the eggs onto the paper, using a rubber spatula to spread them thinly around the edges.
Add green onions and cut kimchi into small pieces, squeeze them together, and serve together.
šIt is important to squeeze the kimchi.
I also top it with mozzarella cheese, chia seeds, and hemp seeds (I always use these ingredients as a way to add nutrition).
Continue to cook over medium heat until golden brown, then fold in half and press down firmly.
šThe pressing process helps the cheese stick to the rice paper.
Now all you have to do is cut it in half!
